I’m pretty surprised at myself for keeping this now weekly tradition of Sunday Recipe going seeing as I always give up on things *cough* 30 Day Shred (no seriously I’m committing to that now, everyday, really…from Tuesday). I feel as if I have lots to do yet I get nothing done and everything that I want to do suffers. Does that make any sense? Probably not, but needles to say the basic gist is I can’t wait to be finished with this dissertation and college in general. If anyone would like to do it for me letta girl know.
This week I tried Stuffed Mushrooms with Goats Cheese and Walnuts. I found it pretty yummy but goats cheese is definitely an acquired taste. The great thing about this easy recipe is that you can easily substitute the goats cheese for a different cheese or even breadcrumbs.
1. Wash mushrooms and place on a baking tray.
2. Stuff mushrooms with goats cheese. Drizzle with balsamic vinegar and olive oil. Place in oven for 20 minutes.
3. After 15 minutes remove and sprinkle chopped walnuts ontop. Return to oven for a further 5 minutes. Toasting nuts brings out a nicer flavour in them dontcha know.
4. Remove from oven once cheese is fully melted and serve as you like. I had mine with a baked potato, or two.
Anywho, I’m hoping to get a few posts up this week that I’m pretty excited about if all goes according to plan because so far I’ve been disappointed with the general lack of beauty and fashion posts I’ve been able to do, or rather, failed to do. Fingers crossed I will actually get an outfit post up during the week plus a 5 ways to… beauty trend. Cross those fingers.
