Sunday Recipe: Nutella Cheesecake

On New Years Eve myself and my Mam sat down to watch Julie & Julia. It was my first time seeing it and I fell in love with it. I loved the concept of cooking 524 recipes in 365 days and blogging about the process (especially being set in 2002). Now, I’m not going to try attempt that feat but I am going to try to cook up something new every Sunday. I received a ton of cookery books for Christmas (trying to tell me something?) and I’m constantly pinning away so that’s were I’m going to start.

First up is Nigella Lawson’s Nutella Cheesecake! The great thing about this is that its no bake. Yay for there being no chance of me burning this!

You will need:
– 400g Nutella
– 250g digestive Biscuit
– 75g unsalted butter
– 500g cream cheese
– 100g hazelnuts
– 60g icing sugar


1.Turn the oven to 180 and toast the hazelnuts for a few minutes. It really brings out the taste! Allow to cool.

2.Break the digestive biscuit into a food processor. Add the biscuit and 15g of the Nutella. Blend them until it starts to clump together. Add 25g of the hazelnuts and pulse until it becomes a sandy mixture.

3. Place the mixture in a tin and press it firmly down to make a base on the bottom and sides of the tin. Place in fridge for 30 minutes.

4. In the meantime its time to make the yummy filling! Beat the cream cheese until smooth and then add the remaining Nutella until thoroughly combined.

5. Remove the tin from the fridge and smooth the cheesecake mixture in. Chop up the remaining hazelnuts and scatter them on top. Place the cheesecake back in the fridge and allow to set for at least 4 hours before serving.

I’m not crazy on cheesecake but I loved this. Although its very chocolate-y its not heavy. Its pretty simple and quick to make and holds well for a few days, not that it would last that long. So yummy!
