Courgetti. Courgetti. Courgetti. How fun is that word? It’s also one that I’ve been reading a lot of lately. I felt like I just couldn’t escape the word(courgetti!) The idea of courgetti really intrigued me. Plus I’ve been trying to cut down on curtain foods lately since I found out that I have IBS. The key to Courgetti is a julienne peeler as it gives you lovely spaghetti like strips. I ordered mine online and anxiously awaited its arrival. I finally got my peeler last week and I’ve quickly become addicted to courgetti. It’s so tasty but with a bit of pesto sauce it’s devine and its so filling-unlike pasta because I always find myself starving 2 hours later. An added bonus is that it’s quick and easy to cook and there are a lot of variations that you can play around with- I’m hearing it’s also pretty tasty as a pasta substitute with Spaghetti Bolognese.
-2 fresh courgettes
-1 red onion
-1 clove of garlic
-julienne peeler (here)
1. Peel 2 courgettes using a julienne peeler-I like to leave the skin on.
2. Chop your onion and garlic.
3. On a frying pan cook the onion, then the garlic and then add in the courgettes. Cook for about 5 minutes.
4. Add your pre-cooked chicken then the pesto.
5. Serve immediately.
